A green olive stuffed with red pimento (sometimes called “pimiento”) and pierced with a toothpick. Green olives are just olives that are picked before they're ripe, then pickled. Heart-shaped red pimento peppers may be cut into tiny pieces or pureed before being inserted into green olives.
